Instagram Story Recipes

I love to cook. Always have, always will. Probably because I love to eat, and the two hobbies tend to go hand-in-hand. And while I truly enjoy every minute spent in the kitchen, 90% of the time it's not until 7pm or later before I finally get home to start dinner. So when it comes food, I like my recipes how I like my gossip; quick, to the point, and maybe a little spicy. 
Lately, I've been highlighting some of my favorite dinner ideas on Instagram. (If you missed any, give me a follow and check out my story highlights!) I didn't think too much of it until people started continuously asking for the recipes, and commenting how much they enjoyed watching me make food. Then when another friend added, "You know, you should just write a blog post." well, it doesn't get any clearer than that. 

So let's DIG IN! Below are SIX of the past dinners enjoyed at the Wellman household and links to the original recipes. Give them a try, let me know what you think, and if you have any go-to favorites you want to share I'm all ears! 
What you need: 
6 cups chicken broth
2/3 cup uncooked orzo
1 cup shredded carrots 
1 1/2 cups uncooked asparagus, snapped to bite size pieces 
1 cups frozen broccoli 
4 medium scallions, cut into small pieces
1/3 cup fresh dill, chopped 
2 tbs lemon juice
Salt and pepper to taste 

What to do: 
1. Bring broth to a boil in a large saucepan over high heat. 
2. Add orzo and carrots; boil 7 minutes.
3. Add asparagus and frozen broccoli; boil until orzo and vegetables are tender, about 3 minutes.
4. Remove from heat, stir in scallions, dill, lemon juice, salt, and pepper. 

What you need: 
2 golden delicious apples, cored and diced
2 kiwi, peeled and diced
2  8 oz raspberries, roughly chopped or smashed 
1  16 oz strawberries, diced 
2-3 tbs fruit preserves, any flavor 
Dash of brown sugar 

What to do: 
Chop, dice, and slice your fruits. In a large bowl, thoroughly mix kiwis, apples, raspberries, strawberries, and fruit preserves. If you think it needs a little more sweetness, sprinkle brown sugar in and mix well. I think it's served best with cinnamon and sugar pita chips! 

What you need: 
2 sweet potatoes, chopped
3 tbs olive oil, divided
1 cup bell peppers, chopped
1 cup uncooked rice
1 can (14.5 oz) petite diced tomatoes
1 can (15 oz) black beans, rinsed and drained
1 cup frozen corn
1/2 tsp minced garlic
1/2 tsp chili powder 
1 tsp cumin
2 cups vegetable or chicken broth
2 tbs lime juice (optional)
Optional toppings: shredded cheese, avocado, sour cream, scallions

What to do: 
1. In a large skillet over med-high heat, combine 2 tbs olive oil with all the sweet potatoes, and saute for about 6-8 minutes until tender. 
2. Add remaining oil, peppers, and rice. 
3. Cook, stirring constantly for 2-3 minutes. Then add tomatoes, black beans, corn, garlic, chili powder, cumin, and broth. Give everything a good stir, bring to a boil. 
4. Reduce heat, cover, and let simmer for 10-15 min, or until the liquid is absorbed and rice is cooked. 
5. Remove from heat, stir in lime juice, top with cheese so it gets nice and melty. Top with whatever you want and enjoy! 

What you need: 
1 lb boneless skinless chicken breasts, diced into 1-inch cubes
3/4 cup chopped yellow onion 
1 tbs olive oil 
2 cloves garlic, minced
salt and pepper 
1 3/4 cup chicken broth 
1 cup dry quinoa
1/4 tsp dry thyme
2 1/2 cups chopped broccoli florets 
1 cup shredded sharp cheddar 

What to do: 
1. Heat olive oil in a deep skillet over med-high heat. Once hot, add onion and saute 2 minutes. 
2. Add chicken and cook 2 1/2 min stirring occasionally.
3. Add garlic and saute 1 min longer. 
4. Add broth, quinoa, and thyme and season with salt and pepper. 
5. Bring to a full boil then cover, reduce heat to a simmer and cook 12 min. 
6. Lift the lid, sprinkle broccoli over top, recover and simmer about 8 min longer until quinoa and broccoli have cooked through. 
7. Sprinkle cheese over top, cover and let melt 1-2 minutes. 

What you need: 
3 tbs olive oil
3 cups yellow onions, chopped
1 tbs minced garlic
4 cups chicken stock
1 28 oz can crushed tomatoes
Large pinch of saffron
Salt and pepper 
1/2 cup uncooked orzo
1/2 cup heavy cream 

What to do: 
1. In a large pot or dutch oven heat the olive oil over medium heat. 
2. Add onions and cook for 15 minutes, stirring occasionally, until golden brown. 
3. Add garlic and cook for 1 more minute. 
4. Stir in chicken stock, orzo, tomatoes, saffron, 1 tbs salt and 1 tsp pepper. 
5. Bring to boil then lower heat and simmer for 15 minutes. 
6. Stir in the cream, and let soup continue to simmer for 10 more minutes, stirring frequently, until the pasta is cooked. 

What you need: 
6 red, orange, or yellow bell peppers 
2 cans of chicken chunks in water (or 2 cooked chicken breasts) 
1 1/2 cups mozzarella cheese, shredded and divided 
1 cup cooked quinoa
1 6.25 oz jar of pesto 

What to do: 
1. Turn on broiler to high. Place bell peppers under broiler and broil for 5 minutes on each side until skin blisters and begins to turn black. (This step is completely optional. Just a lil something extra!) 
2. Remove peppers from oven, set aside. Preheat oven to 350. 
3. In a medium-size mixing bowl combine chicken, 1 cup of cheese, pesto and quinoa. Toss to coat. 
4. Once peppers are cool enough to handle, cut in half and remove insides and seeds. Add 1/4 cup of chicken mixture to each pepper and top with cheese. 
5. Bake 10 minutes, then serve. 

There's something about taking simple ingredients and creating a delicious and comforting meal that I adore. I'm not a brilliant chef, nor do I make anything mind-blowing, but I can follow a recipe and have been known to whip up some pretty great dinners with whatever happens to be on hand.

Soup's On! 10 Hearty Flavors for Fall

How is it basically the end of November already??? From all the tree's I've seen up, and the never ending marathon of Hallmark Christmas movies playing at my parent's house, you'd swear we skipped straight to December. 
But fear not Fall! YOU you special, YOU are important!
In our house, Fall also means soup season. Nothing says “comfort” like having a delicious bowl of goodness steaming in your hands to fill your belly and warm your soul. Whether you’ve prepped it the night before in the crock pot, or are just now dusting off your dutch oven, there is no time like the present for soup.
As a tribute to this harvest season, I’ve gathered 10 of my absolute FAVORITE soup recipes! I originally posted my soup finds at STRONG IS OUR SEXY, and now sharing them again with you! Each bring their own unique flavor to the table, but I promise, they are ALL equally heavenly. If you want to read the full recipe, click the link to go to the original source page.

This one pot recipe is great for using up leftover chicken. The BBQ flavor is a unique twist on traditional chili, and topping it off with cheese and cilantro is always a good idea.
Chicken pot pie has to be one of the most classic comfort food “go-to’s” out there. This version brings everything you love about the pie into a soup. Using bags of frozen veggies along with chopped fresh ones makes for easy work, and if you happen to have some biscuits laying around, I highly suggest paring the two.
The building blocks of this soup are pretty basic; meat, beans, vegetables, and tomatoes. The beauty of it is you can swap and add whatever you want! Don’t have spinach? Any leafy green will work. No sausage around or keeping it vegetarian? Just add more beans. It’s all good people.
Any excuse to use pumpkin while cooking in the Fall is a good excuse. This vegetarian chili is still extremely hearty even without the meat. The black and garbanzo beans provide a boost of protein, and depending on how spicy you like it, feel free to amp up or down the amount of chili powder.

I love egg noodles. They’re chunky, curly, and oh so easy to cook. Simply toss all the ingredients into the pot, bring to a boil, then let simmer to whip up this quintessential under-the-weather dish.
This meatless taco soup has three different types of beans, along with corn and tomatoes, to really pack a protein punch and leave you feeling satisfied. Plus with the use of a slow cooker, you can set it and forget it!
OK. So this isn’t technically a soup, but you eat it out of a bowl, and it has a brothy base so I’m counting it. Don’t be intimidated by ingredients like lemon grass and fish sauce, everything can be found at your local supermarket. The end result is so colorful and deliciously worth it, believe me!
This pasta based soup is a recent find of mine, but is quickly becoming a popular go-to at home. Frozen bags of tortellini make this especially quick and easy, plus the recipe includes directions for toasted parmesan crostini. YUM!

Ranch? Check. Chicken? Check. Letting it cook all day while I’m at work? Check! This white chili is bursting with flavor, and perfect with just a dollop of sour cream on top. Need more heat? Feel free to add a little chili or habanero powder to kick it up a notch.
Orzo is fun. It may look like a type of rice, but in reality they’re tiny little pieces of pasta! If you’d rather use what you already have on hand, any pasta could be substituted for the orzo.

Quinoa Quin-what?


Last week at Strong Is Our Sexy, I shared my thoughts (and favorite recipes) featuring the power protein QUINOA! 
Just like feather hair extensions, YOLO!, or hearing Call Me Maybe on the radio at least seven times a day, the cooking world has plenty of fads that come and go.

Chia seeds, avocados, coconut water, meatless Mondays, juicing EVERYTHING. These are just a couple examples of food-crazes that have become really popular in the last few years.

My feelings towards eating clean are pretty straightforward: if you have a list of veggies, fruits, and healthy grains that you know you like, eat em’ up! BUT if you want to be a bit adventurous, there’s always something new being claimed as the “world’s healthiest food” (did someone say kale?).

This desire to get crazy in the kitchen led me to try another food that is getting rave reviews and popping up in recipes over the place: QUINOA!
What exactly IS quinoa? Keeping things honest, I really didn’t know when I first bought it. I figured it was some sort of grain, or a variety of rice since that’s what it resembled the most and is prepared in a similar fashion. To my surprise though, after some research I discovered it is actually not a cereal at all, but rather a member of the same family as spinach and beets.

Most supermarkets carry quinoa (pronounced KEEN-wa, in case you were wondering) in the same aisle you’ll find the rice and dried beans. I buy mine prepackaged at our local Kroger, but you can also find it in bulk bins. If you do purchase it in bulk, keep in mind that quinoa expands during the cooking process (like pasta and rice) several times its original size.

Speaking of the cooking process, I stick to a 1 part quinoa to 2 parts liquid ratio. Mix the liquid and quinoa in a saucepan, bring to a boil, then reduce heat to simmer and cover. One cup of quinoa usually takes around 15 minutes to cook this way, and I like to check on it and give a little mix every once in a while. Once your liquid has disappeared and been absorbed by the quinoa, you’re good to go!

So why does quinoa rock my socks? Well, there are multiple reasons! One of the main qualities of quinoa I love is its overall nutritional richness. In contrast to most grains, quinoa can serve as a complete source of protein, which is perfect for those of us who are trying to cut back on meat or are vegetarian. I also have a couple of friends who are allergic to gluten, and quinoa is a perfect food to include on a gluten-free diet. It not only lacks gluten, but doesn’t even belong to the same plant family as wheat, oats, barley or rye. You can also find quinoa flour and pasta out there!
Now it’s time to get cooking!

** To make an even quicker stir-fry, I heat up a couple bags of frozen mixed veggies in a wok while the quinoa is cooking. Toss with soy sauce, serve over the quinoa, and you’re done!**

Insanely Easy Fresh Garden Salsa

I'm back at STRONG IS OUR SEXY sharing a healthy dish that's also a true crowd pleaser!

My husband and I have these friends who are super fun. The reason they are super fun is because they always invite us over to their house. While over at their super fun house, we play lots of pool, listen to music, drink yummy beverages, and eat a TON of food. And because they are super NICE as well as super fun, without fail we will end up bringing home as much, if not more, food than we showed up with. Like my husband and I, our friends are major foodies, which is one of the reasons we love them. People who are willing to try anything and everything have a special place in my heart. Truth time: picky eaters drive me bonkers!

When they asked us to join them again last Saturday, and requested we bring a snack or appetizer, I knew I needed a game plan. Personally I have yet to shake that “constantly full” feeling from the holidays. I know I know, that all ended weeks ago, but we still seem to have so many desserts lingering around, I find myself constantly snacking.

So while searching for a dish to bring, I tried to focus on something light and more on the healthier side. That’s when I stumbled upon a recipe my cousin had shared with me years ago; Fresh Garden Salsa! This stuff is delicious, and so quick and easy to make its ridiculous.

I just love the variation of color this salsa has, it’s absolutely gorgeous! With fresh veggies, and lots of protein, this dish is truly a winner for anyone trying to please a crowd while also keeping things nutritious.

Therese's Famous Spaghetti Sauce

You guys, my mom makes THE BEST spaghetti sauce.

“No way! You see, MY MOM makes the best spaghetti sauce.”

….well I find that hard to believe, because I live in this town, and everyone I KNOW is talking about MY MOM’S spaghetti sauce. 

“Well I talked to Mayer Grimble the other day, and he declared MY MOM’s sauce the tastiest in the land!”

But seriously, my mom actually does have a KILLER spaghetti sauce recipe, and lucky for you I am unlocking the family-vault-of-secrets and sharing it with the masses!

Spaghetti dinners feasts were a bit of a tradition growing up in my house. We would get out the big roasters, and fill them with enough pasta and sauce to feed a small army. Which was perfect, because when my entire extended family came over, that was pretty much the magnitude of us.
I am all for coming up with random reasons to get together with my friends and family. Nothing says “I love you” like offering to fill their bellies with delicious food.  And who doesn't ALWAYS make too much pasta? I swear that stuff is IMPOSSIBLE to figure out, I mean seriously, does it multiply in the pot by 10 when it’s boiling?

So just take that extra pound of pasta as an excuse to invite everyone over! This recipe will fill your home with an aroma that is one part garlic, one part aphrodisiac, and one part fairy dust magic. I promise, so SO GOOD!

Here is what you need!

1 lb. ground beef
1 lb. Italian sausage
1 medium onion – chopped
1 medium green pepper – chopped
8 cloves garlic – minced
3 cans, 15 oz.  Italian diced tomatoes
30 oz. tomato sauce
12 oz. tomato paste
1/3 cup sugar
2 tbsp. Italian seasoning
1 tbsp. dried basil
2 tsp. dried marjoram
1 tsp. table salt
½ tsp. black pepper
Pasta of your choice - cooked 

Originally this recipe was intended for the crock pot, and honestly I think the longer it cooks, the better it tastes. Something about it just stewing all day long really sets in those incredible flavors. That being said, if you don’t have the time to let it cook all day, or just want your pasta RIGHT THIS SECOND! there isn’t much difference between the slow cooker, and the stove top directions.

Crock Pot directions:
In a large skillet over medium heat, cook beef and sausage until no longer pink; drain. Transfer to a 5 qt slow cooker, stir in green peppers, onions, garlic, tomatoes, tomato sauce, tomato paste, sugar and seasonings; mix well. Cover and cook on low for 8 hours or until bubbly. Serve over pasta.

Stove top directions:
In a large skillet over medium heat, cook beef and sausage until no longer pink; drain. Transfer to a large soup pot, stir in green peppers, onions, garlic, tomatoes, tomato sauce, tomato paste, sugar and seasonings; mix well. Cover and cook on high, stirring every once in a while, until bubbly. Serve over pasta.
I hope you give this sauce a try, and think of me, when all of your friends are completely astonished by your unbelievable spaghetti and the mystic qualities it possesses.

Recipe Review

For those of you, who have absolutely NO desire to come up with something new to make for dinner, have no fret! I am here to do the dirty work for you. I've rummaged high and low through the vast span of the inter-web (ok…mainly Pinterest) and have returned equipped with a batch of new and easy-peasy recipes to share! All of these have been a hit in the Wellman house, and if the ever disappearing leftovers aren't a sign of good eats, I don’t know what is.

(One Skillet) Sweet Potato Burrito Bowls

Anything that says "one skillet" I am 100% on board with. Less dishes to clean = winning. Make sure you use a big pan though, this recipe is chocked full of beans, corn, sweet potatoes, rice, peppers, and all sorts of other burrito goodness. Click HERE for the recipe. 

Apple Pecan Pies

I recently made these for a pot luck at work, and although they didn't look very appetizing, they were super yummy! Very FALL, with the pecans and apples. The most difficult part was coring all of the apples, just took a few attempts before we really got the hang of it. Click HERE for the recipe.  

Chicken Broccoli Quinoa Casserole

This is another "one pot wonder" dish that is an updated version of the classic chicken broccoli and rice casserole. I've recently began cooking more with quinoa, and it's a great substitute for rice that is packed with protein. Click HERE for the recipe. 

Crock Pot Maple Dijon Chicken Drumsticks

God bless the crock pot. I usually prep everything the night before, cover, and stick it in the fridge. Then the next morning I just plug it in and press "start" before I take off for work. Knowing that I don't have to cook at all that night, truly makes getting through the day easier. Plus these 6 ingredient drumsticks are amazeballs! Click HERE for the recipe. 

Savory Ranch Crock Pot Pork Loin

Let me reiterate, I LOVE THE CROCK POT! I try to have pork in our menu every once in a while so Eric can have his fix. Otherwise he's stuck eating chicken more often than I'd like to admit. Plus this way I know I can't mess it up. Throw everything together, press start, and done. Click HERE for the recipe.

And speaking of chicken! Featuring tons of tomatoes and artichokes, this has become one of our favorite ways to cook it. I believe the recipe has this served over pasta, but we usually just eat it without. I have been doubling the amount of artichokes it calls for though, but that's just our preference. Spinach Tortellini Tomato Soup

On Wednesdays, we eat pasta. And you can NOT beat this old fashioned tomato soup infused with delicious tortellini concoction. You cook everything in one huge pot, use frozen tortellini (translation: EASY) and then basically just heat everything through. Click HERE for the recipe.

Stupid Easy Paleo Spaghetti Squash and Meatballs

So spaghetti squash and I have a love/hate relationship. I really think it's a nice alternative to pasta. No, it could never replace the carb-tastic original, but it is a waste line friendly way to mix things up. Every time I attempted to make it though, I ended up trying to cut up a piping hot-out-of-the-oven squash while, wearing oven mits, and almost dropping everything onto the floor...and cursing. 
Enter "stupid easy" spaghetti squash recipe. 
You guys, I am NEVER baking my spaghetti squash again. Cutting it up beforehand (while it's NOT a million degrees) and sticking it in the crock pot surrounded by sauce and meatballs, is SO MUCH BETTER! To get my squash to fit, I had to cut it up into quarters, which made handling it to pull the "spaghetti" out of the squash much more manageable in the end.

Warm Mushroom and Asparagus Salad

Most of the time I don't put much effort into making sides. This salad was perfect though alongside some basic chicken that we threw on the grill. I could eat asparagus everyday, and the mix of balsamic vinegar and thyme brought in great flavor. Click HERE for the recipe. 

Are you hungry now?! I could browse through recipes for days. The whole process of cooking and creating something from nothing really gets me excited!
